While I think your are correct, the biggest hurdle I have faced in the last year that my nano has been open is marketing. All of the things you say are spot on, but if a large amount of people don't come through the door, all the amazing things mean nothing. I tell everyone that will listen, making beer is the easiest part of owning a brewery. Getting people to drink it is the hardest. Thanks again for your continued support of the brewing industry.

Wait staff can do a lot of harm or actually make a place. I can go anywhere and get a drink. I can't go anywhere and get attentive or friendly wait staff. Unique ideas, place etc... will bring people in a few times. Great wait staff will bring them back time and time again. If people feel like they matter, are in a friendly place where they feel like one of the gang it will bring not only them but their friends in. I've been to fancy places and just neighborhood bars. If the staff is out going and friendly it makes all the difference vs a stand offish staff.

As far as breweries, I get the whole fruit and other out there beers. I personally am not a fan of them. I like a good saison ( nearly impossible to find ) lager or pilsner. Its the subtlety not the in your face taste. I've started brewing my own because these classics - are hard to find. They are also hard to brew as their is nowhere to hide mistakes.
