Alert reader Will Brumas told me I better clarify my last post about putting a kettle under a kitchen hood. I meant to capture the steam, not to capture the flu gases from the burner. You still need to run a separate exhaust from the fire box to the outside, and as I have mentioned this before, you need an air balancer in that pipe to keep the heat down where it belongs in the fire box, rather than flowing out the pipe as the pipe warms. The steam however coming out of the top of the kettle is fine for being caught in the hood. I realize I wasn’t clear on that. Let me know if you have any questions.
